In April, the chef from Italian Hospitality School Lia Ukleba completed a rich and inspiring Erasmus+ job‑shadowing experience at El CIFP Hostelería LHII (Escuela de Hostelería de Gamarra) in Vitoria‑Gasteiz, Spain. Her mobility was marked by direct observation, professional exchange, hands‑on learning and meaningful collaboration with hospitality educators in Spain.
One of the central themes of her visit was sustainable gastronomy. Lia took part in training sessions dedicated to zero‑waste cooking, exploring how circular‑economy principles are transforming contemporary culinary practices. From essential zero‑waste recipes to the creative “Trash Food” workshop—where every part of an ingredient is turned into something useful—she gained practical skills ready to be shared with our learners.
Alongside the professional activities, Lia also enjoyed a rich cultural experience through a guided tour of the historic centre of Vitoria‑Gasteiz, discovering the city’s traditions, architecture and vibrant local community.
