The SAVOR project is a European cooperation initiative dedicated to advancing sustainability within the culinary, agricultural, and hospitality sectors. The project brings together higher education institutions and industry partners with the shared objective of promoting responsible resource management and strengthening the link between food production and gastronomic education.
A central outcome of SAVOR is the development of an innovative digital application designed to connect the agricultural and gastronomic fields. This tool will enable a wide range of users — including students, educators, professionals, and the general public — to access information on products based on country of origin, seasonality, and intended use. The platform will also provide guidance on food‑waste valorisation, small‑scale garden management, and the practical application of circular‑economy principles.
Through this initiative, the project aims to enhance awareness of sustainability across the entire food value chain, from primary production to final consumption. Particular emphasis is placed on educating younger generations about seasonality, local sourcing, and the potential for reusing materials commonly regarded as waste. By the conclusion of the project, partners will deliver a comprehensive tool supporting the transition toward a circular and environmentally responsible gastronomic model.
